Salad of Watercress and King Prawns with Sauté Potatoes

Serves: 10

INGREDIENTS: 

  • 500g Watercress
  • 25 King Praws - cooked and shelled
  • 750g sliced 3 mm Maris piper Potatoes
  • 2 Lemons / zested and juice of one
  • 50ml vinaigrette
  • 50g sliced Shallot
  • a dash of  olive oil 

METHOD:

Sauté the potato in a little olive oil until cooked and golden brown and keep warm. Toss the rest of the ingredients together, place the potatoes around the base of a suitable plate or bowl, and pile the dressed leaves and prawns on top. Sprinkle a little zest of lemon and squeeze a little lemon juice onto each salad. Then serve immediately.
