Potatoes for Caterers

INGREDIENTS:
2.4kg Potatoes washed and peeled
150ml oil
Salt
parsley (roughly chopped, stalks removed)METHOD:
1. Oven Temp: 200 0C, 375 0F, Gas Mark 6
2. Cut the potatoes to an even size (about the size of any egg)
3. Heat the oil in roasting trays, add the potatoes and allow to cover lightly on top of the stove. Season with salt.
4. Place in the oven and cook for about 45 minutes until golden brown turning once after half an hour.
5. Drain off and serve sprinkled with chopped parsley
