Potatoes for Caterers

INGREDIENTS:
0.25kg Fresh or frozen fish
2 Hard boiled eggs, sliced (each)
0.3 White Sauce (Litre)
0.25 Fresh Parsley, chopped (bunch)
0.6kg mashed potato
2 fresh tomatoes, sliced (each)
METHOD:
1. Preheat the oven to 200ºC, Gas Mark 6.
2. Make mashed potatoes
3. Hard boil the eggs, cool and shell.
4. Make the white sauce.
5. Lay the fish in the bottom of a large baking dish.
6. Place the boiled egg and tomato over the fish
7. Pour the sauce over the fish
8. Spoon the mashed potato over the sauce
9. Bake for 30-40 minutes, until golden brown.
